The destination
There are two Ibizas. The one that arrives every July, and the one that has always been here — dust roads through sabina pine, a fisherman's cove reached only on foot, long lunches that finish when the light goes.
Amarante works almost exclusively in the second. Our residences sit on the wilder north and the sunset-facing west, close enough to the island's best tables and far enough that you hear nothing but cicadas.
